Fendant is the name in the Valais for the iconic Swiss variety, Chasselas. While the climate in the Valais is one of if Switzerland’s warmest and driest, the character if Chasselas grown, in the rocky alluvial schist and limestone soils at the foot of the Alps is more mineral and delicate than, the versions of this variety grown in the famed Grand Crus of Lavaux. For this reason, Fendant is the most prized wine for pairing with Swiss cheeses, fondue, and raclette.
